Moringa Pesto and Zucchini Spaghetti Recipe

Moringa pesto and zucchini spaghetti recipe is perfect for summer due to its rich but refreshing taste. It is a healthy dish, very nutritious and rich in fiber (1g per 100g) and carbohydrates (3.11g per 100g).
In fact, apart from their diuretic effect and their benefits against constipation, zucchinis are rich in folic acid, vitamin C and vitamin E. In addition, they are one of the lower calorie vegetables: 100 grams of the product contain only about 16 calories.
Moringa, why is it good and healthy
Moringa, on the other hand, is a true superfood, rich in antioxidants, phenolic compounds, vitamins and all essential amino acids.
For example, it is a miracle cure for the digestive system due to the presence of B vitamins.
Preparation
Delicious and strengthening first course, it goes perfectly with both spaghetti and the classic Genoese trofie.
Ingredients for the pesto:
1 teaspoon moringa powder;
2 tablespoons pine nuts;
a generous handful of fresh basil leaves;
6 tablespoons extra virgin olive oil;
½ teaspoon Himalayan salt or iodized salt;
1/8 unpeeled garlic clove;
Cherry tomatoes and some hemp seeds for decoration;
1 zucchini.
Preparation
Cut the zucchini into julienne strips, blanch them briefly in boiling water and place them in a bowl.
Process all the other ingredients in a blender until you get a creamy mixture, pour it over the zucchini.
Add al dente spaghetti or trofie and garnish with cherry tomatoes and hemp seeds.
