Ingredients
The ingredients for 10 cupcakes are:
125 g coconut flour;
125 g tapioca flour;
125 g honey;
125g coconut oil;
125 g pumpkin seeds;
40 g moringa powder;
4 eggs;
1 bar of dark chocolate;
1/2 teaspoon baking powder;
1/2 teaspoon vanilla;
Salt as needed.
Preparation
Combine the flour, pumpkin seeds, moringa powder, baking soda and salt in a blender and pulse until you get a smooth mixture.
Gradually add the eggs, oil, chocolate previously melted in a water bath, vanilla extract and honey, stirring with a wooden spoon until the consistency is smooth and free of lumps.
Preheat the oven to 200°C and lightly grease a muffin tin or aluminum baking tins. Fill these with the dough, but don't overdo it.
The baking soda will cause the batter to rise as it bakes, so you should only fill the pan to about half its total height to prevent the cupcake from overflowing.
Once everything is in the oven, reduce the temperature to 180°C and let it bake for 20 minutes.
To check if the cupcake is done, insert a toothpick into it and pull it out. When the toothpick is dry, the cupcake is ready!
To decorate, melt the dark chocolate and dip the tops of the cupcakes in it. Decorate them with pumpkin seeds.
For those who like it even sweeter, you can also add a vanilla glaze to them for an impressive effect.
The result is a healthy snack with only 350 calories per serving and rich in the properties of Moringa.
Moringa Pesto Lasagna Recipe
Among the most popular quick summer dishes of Italians, and not only, pesto is certainly one of the most famous Italian recipes worldwide. It is characteristic for its green color and delicious in its intense taste.
Moringa pesto is a delicious, more exotic alternative to traditional pesto.
The key is to replace the basil and parmesan with moringa powder, coriander and cayenne pepper to add a spicy touch.
Ingredients
To prepare it you will need:
250 grams chopped coriander;
Cayenne pepper to taste;
80 grams of pine nuts;
1 tablespoon moringa powder;
2 tablespoons extra virgin olive oil;
juice of half a lemon;

Place all ingredients in a blender and blend until you get a smooth mixture. Don't worry if the appearance doesn't resemble traditional Genoa pesto; usually it has a grainier consistency.
Once prepared, you can transfer it to glass containers and cover it completely with extra virgin olive oil to preserve it for several months.
An alternative is to freeze the pesto in small ice cube trays to have individual portions ready to use at any time.
Moringa pesto can be used as a sauce to season meat, potatoes, bread or pasta. Let your imagination run wild and add a few drops of this pesto to various dishes to give them a special touch.
To prepare lasagna you will also need: 250 g lasagna, 200 g scamorza, 250 g ricotta, parmesan shavings.
Preparation: Bring salted water to a boil to cook the lasagna, but be careful not to finish cooking. Only let the lasagne cook briefly so as not to overcook it in the oven.
Once ready, drain and cool. In a baking dish, place a first layer of lasagne with moringa pesto, ricotta and scamorza slices, and continue with another 3-4 layers. Finish with a sprinkle of Parmesan shavings and a drizzle of extra virgin olive oil.

Moringa and Black Seed Omelette Roll Recipe
Wonderful to look at and delicious to taste, the Moringa omelette roll combines the pleasant with the useful. What makes this dish special is that it uses moringa leaf powder in its ingredients list.
The leaves are the real bearers of benefits, rich in active ingredients that stimulate the immune system and balance blood pressure and blood sugar levels.

To prepare the omelette roll for two portions you will need:
Four eggs
20g Moringa leaf powder
100 g melting cheese
A tablespoon of flour
2 chopped peppers
A tablespoon of oil
A teaspoon of black cumin seeds
Salt and pepper to taste

Before you start preparing, preheat the oven to 180°C. Beat the eggs into a bowl and add the flour, chopped peppers, salt, pepper and moringa leaf powder. Stir the mixture thoroughly until smooth and homogeneous.
Line a rectangular baking tray with baking paper and lightly grease it by pouring the egg mixture into it.
Spread a layer of moringa leaf powder evenly over the surface. Then sprinkle the mixture with sliced cheese and ground black cumin seeds. Finally, cover everything with another sheet of baking paper and let it bake for 15 minutes.
Once the omelette is ready, let it cool before rolling it up. In this case, the baking paper is crucial to add stability and structure to the process. After rolling, let it rest for a few minutes before slicing.
Pizza with moringa: the recipe
Tasty and rich, the Moringa pizza is not too different from the classic pizza, because the addition of this "magical" and health-promoting ingredient does not affect its taste, but blends perfectly with the other ingredients.
For the moringa pizza recipe you will need to make a dough with your preferred flour (durum wheat flour, wheat flour, wholemeal flour, mixed flour, etc.) and during preparation and before adding the yeast, add one or two level teaspoons of moringa powder, preferably organic -Quality, add to enrich it. The dosage depends on the amount of flour used. Below you will find the preparation of the Moringa pizza dough for 1 kg of flour.
Ingredients:
1 kg of flour of your choice (we recommend using 500 g of type 0 flour and 500 g of organic durum wheat flour).
1 pinch of salt.
A small cup of warm water in which you dissolve about 20 g of brewer's yeast.
1 tablespoon extra virgin olive oil.
Three level teaspoons of Moringa powder (organic quality).
Preparation
As already mentioned, the preparation of the Moringa pizza dough is no different from the traditional pizza dough:
Place the flour in a large bowl or directly onto a clean, spacious work surface where you can work comfortably.
Add salt and moringa powder and mix well by adding warm water and the previously prepared yeast.
Work the dough until it becomes elastic and comes off easily from your hands to create a dough piece for fermentation. Finally, for a softer and more flavorful dough, add extra virgin olive oil and work the dough some more.
For consistency, we recommend always having some flour on hand to add if necessary.
Cover the dough in the bowl with a cloth and place it in a protected and dry place (for example in the oven); let it rise for at least 5 or 6 hours.
After it has risen, you can form as many small dough pieces as you want to make pizzettes, depending on the size. Let them rise for another thirty minutes to improve digestibility.
Finally, roll out the dough pieces, top them as desired (tomato sauce, mozzarella, a pinch of Parmesan, a dash of extra virgin olive oil for the Margherita) and bake them in an oven preheated to at least 200°C for about 10-15 minutes. Serve hot.
